Keep in mind that most Gollum's movements and facial expressions where driven by motion capture data created from human actor, Andy Serkis.  That said, one cannot deny the amazing textures created by the CG artists responsible for the final product.

You could create a four-sided N-Gon or make cube and then adjust the Y dimension so that it is very thin.

Maybe you need to scale your modifier so that it completely covers the sphere.  I just went through these steps with no trouble:

1. Add sphere
2. Convert sphere to mesh (Build --> Convert to Mesh)
3. Add modifier over sphere; set to taper
4. [non-uniform] Scale modifier to completely cover sphere
5. Drag Select both; Build --> Modifiers --> Bind Modifier
6. Double-click on modifier and select taper setting
7. Build --> Modifiers --> Effect Modifier
8. Build --> Convert to Subdivided (to make it really smooth)

[Edit] I added a ZIP with AN8 files that demo each of the steps above.

Let's say I've modeled a candle, and now would like to have a [perfect] circular of 16 of them sitting on top of a cylindrical cake.  Is there an easy way to do this?

I will admit up front that I'm very new to Anim8or and 3d modeling in general. 

That said, I saw a demo in another package that was really cool: he called it "front camera projection."  The idea is that he was able to take a texture (static image of a room) and project it through the camera view onto simple geometry; this allowed him to add other 3d elements to the scene and the projected texture was used to receive light, etc., during the course of the animation.  Is this kind of thing at all possible in Anim8or?

I use Vegas (professional version, but there is a lower-priced home edition) to take images exported from Anim8or and comp them in with other video.  You'll have to check the Sony site if the home version of Vegas has this same feature.
