is it possible to make a model look like it bends w/o adding a fulcrum (like in the robin tut)?

Yes you can, it's known as skinning the model.  There are two ways through envelope weights and painted weights.  I find painted weights much more useful because you can be much more precise with them.
You can read about them in the manual here, and MP3D has skinning tutorials in both the beginners and intermediate section on his website.
You can google and find more tutorials and information as well.
