UV mapping is basically where you 'unwrap' the UVW's of a model (a "texture coordinate system in 3D environments")
So, when you unwrap your model, you'll basically take the 3d and lay out the faces on a 2d plane.  So, you'll have the UV's layed out on an image, and when you apply an image to the model, the texture will wrap around the model corresponding to the way you unwrapped it.
You can find great tutorials Here and Here.  I'd reccomend the first tutorial because personally I'm partial to Lithunwrap over UV mapper classic, though UV mapper pro is probably better than both.
